Suchitoto isn't meant to be visited, it's meant to be walked. It's a small colonial town built on cobblestone streets that climb and drop without warning, and the best way to get to know it is to get lost for a while before pulling out the map.
Morning
Start at Iglesia Santa Lucía, its white façade nearly blinding under the 8am sun. Wander the streets of downtown with no destination — every couple of blocks there's an art gallery or a craft workshop with the door open, in no rush to sell you anything.
Afternoon
Head down to Lake Suchitlán. Rent a small boat and cruise around the Islas de Media Luna — herons, iguanas, and a silence broken only by the motor. Come back to town in the mid-afternoon for a local coffee on one of the terraces overlooking the valley.
Night
Have something simple for dinner — a typical dish, a local beer — and sit in the central park to watch the whole town come out for a walk as the heat drops. It's the best hour of the day, and nobody tells you that until you live it.
